This chicken will never go out of stock! It’s so easy to make & freeze. I never buy ready made chicken stock, as the taste is no where near the same. I use the carcass & wings of 4 chickens. Not much meat comes out of it but that’s the whole point & that is the simplicity of it, you don’t have to deal with the chicken meat & it’s much more concentrated & full of goodness due to the large amount of bones being boiled. I always have this golden & delicious chicken stock handy in my freezer & use it in so many recipes: from rice, soup, pho, lamb roast or even just on its own with ginger, garlic & lemon as a good probiotic soup, excellent for gut health. Make plenty & freeze for weeks to come
𝗧𝗶𝗽𝟭: Most important takeaway here should be not to wash raw chicken. This is very important, as washing raw chicken before cooking can increase your risk of food poisoning from campylobacter bacteria. Splashing water from washing chicken under a tap can spread the bacteria onto hands, work surfaces, clothing & cooking equipment.
𝗧𝗶𝗽 𝟮: Use freezer bags to store the cooled stock in order maximise storage space.
- 4 Chicken Carcasses
- 8 Chicken Wings
- 4.5 L water
- 5 Bay leaves
- 1 tsp Black Peper Corn
- 1/2 cinnamon stick
- 1 tsp cardamom pods
- 1 onion cut in 4 pieces
Don’t wash the chicken, do this first step instead. In a large pot, place the chicken & fill with enough cold water to cover the it. Bring to a boil for 3-4 minutes. Strain the chicken & discard the water, clean the pot & rinse the chicken to remove any of the brown foam that might be stuck on it.
Place the chicken back in the pot & this time fill with boiling water. Add the spices & onion then bring to a boil, cover & simmer for 5-6 hours.
Strain the chicken set the stock aside to cool. Once cooled place in the fridge for 1 to 2 hours and then place in freezer bags. Seal well & place them in the freezer.
Shred the chicken. There wont be much but its enough to add to soups and other dishes. Let them cool & place in freezer bag & freeze.
The chicken & broth can be stored in the freezer for up to 3 months.
