The weekend Brunch is breakfast without an alarm. I just love a lazy Sunday brunch when no one in the house is in a hurry & everyone is chilled and relaxed. One of my favorite, super easy and delicious go to dishes for this special day is the famous Shakshouka. I didnt grow up eating shakshouka at home but i first had it in an arabic restaurant in London and i simply loved it. Its so rich and so succulent that it feels almost decadent when in reality this is a keto recipe that is high in protein and big on taste. There are many takes on this famous dish and this is mine. Make this for your friends and family this weekend they are going to love you for it!
- 3 tbsp olive oil
- 2 mashed garlics
- 1 diced onion
- 1 sweet pepper chopped
- 10 cherry tomatoes cut in half
- 1tsp pepper paste
- 250g passata sauce
- 1tbsp heavy cream (optional)
- 1/2 tsp cumin
- 1/2tsp Aleppo pepper
- 1/2 tsp salt
- 6 eggs
- Chopped parsley and chopped jalapeños for garnish
In a shallow skillet, add the olive oil then add the onion fry for a minute or two then add the garlic and fry for another two minutes. add the sweet pepper and cherry tomatoes and fry for another 2 minutes.
Add 250g passata tomato sauce bring to a boil and simmer for 10 minutes.
Make a well for each egg and place them in the tomato sauce with space between each one. Cook on medium heat for 5 minutes then finish off in the oven for a further two minutes.
