- 1 1/2 cups of quinoa
- 1 1/2 cups of boiling water
- 1 tbsp pepper paste
- 1 tbsp tomato paste
- 1 diced onion
- 1 crushed garlic
- 3tbsp olive oil
- 4tbsp lemon juice
- 1 large diced tomato
- 1/4 cup chopped mint
- 3/4 cup chopped parsley
- 1/4 cup chives
- 1/4 cup pomegranate
- 1/4 tsp Aleppo pepper
- 1/2tsp salt
Dressing
- 2 tbsp olive oil
- 2 tbsp lemon juice
- 1 tbsp pomegranate syrup
- 1/4 tsp salt

In a medium sized bowl place quinoa and soak with water and 1/2 tsp of salt for two hours or overnight. Rinse thoroughly until the water is perfectly clear. Do not skip this step or your quinoa will have a somehwat bitter after taste.

In a medium sized non stick pan add the olive oil then add the garlic and fry for a minute then add the onions and fry until transluscent. Add quinoa and fry for another minute. Add pepper paste and tomato paste and mix together well. Add 2 tbsp of the lemon juice, salt and aleppo pepper. Add boiling water mix and bring to a boil. Keep stirring every once in a while so the quinoa doesnt stick to the bottom of the pot. When the water is on the same level as the quinoa reduce heat to simmer and cover. Let it simmer for 20 minutes. Remove from the pot and place in bowl to cool.

In a large bowl place cooled quinoa and add the rest of the ingredients and the dressing and mix. Garnish with parsley and pomegranates.
