I promise you this recipe is hands down one of the best roast chicken recipes I have ever made. Everyone in the family loves it and it has become a family favorite. It’s simple, easy and the chicken comes out succulent, juicy and tender every time.
There are many people, especially the ones living in the states, that have canceled their yearly large gatherings and are opting out for small intimate family dinners instead. This is why I thought I would share with you the perfect roast chicken recipe that can make your dinner a little more fabulous without the fuss of roasting a big turkey but still get a nice Thanksgiving or Christmas vibe on your table.
- 1 Organic free range chicken spatchcocked
- 600ml butter milk
- 1 tbsp salt
- 2tbsp melted butter
- 1/2 tsp turmeric powder
- 1tbsp paprika
- 1/2 tsp cayenne pepper
- In a medium size bowl add the buttermilk and salt and mix well.
- Place chicken in a large ziplock bag and pour buttermilk on top. Seal bag and place in fridge overnight or for 24hours.
- Take out chicken and shake excess buttermilk. Place on a baking tray.
- In a small bowl add melted butter paprika turmeric and cayenne pepper. Mix well.
- Using a brush baste the chicken and place in a preheated oven on 180C for 45 minutes.
