If you’re in a hurry and want something satisfying, quick and with ingredients you already have, this is the perfect recipe. It’s a last ode to a summer that we never had and it’s pure sunshine on a plate! Spaghetti with yellow courgette, chili pepper, olive oil and garlic. Sprinkle a bit of parmigiano reggiano and you have a taste of Italy right here in your kitchen. Hurry and do this recipe before the end of the courgette season.
Summer came and went and I didn’t even feel like there was a summer; in fact, my mind is really still in March! I’m always grateful and thankful for all the blessings in my life but with all the turmoil happening in the world today the thought that we’re almost back to the cold and that winter is just around the corner again is a sobering thought.

- 2 yellow/green courgettes sliced in thin circles
- 4 cloves of garlic mashed

Fill a large pot with boiling water and bring to a boil. Add salt, olive oil and spaghetti and cook until al dente

Right before straining it out aside 1 cup of the spaghetti water

In a shallow frying pan add the olive oil and throw in the chili pepper and garlic and fry for 1-2 minutes

Add the courgettes and salt, and fry until they are lightly browned

Add the cup of pasta water you set aside to the courgette and salt. Add the piping hot spaghetti. Toss well. Garnish with black pepper, parsley and a side of parmesan cheese. Serve and enjoy immediately 😋
