If i could i would eat a manousheh or Lahm Bajine everyday! Unfortunately I can’t because I can’t tolerate the gluten in the dough. Now though, I found a great way to make delicious Manaeesh (wild thyme, sesame pizza) and Lahme Bajine (minced beef style pizza) by using buckwheat flour!
According to Wikipedia 😉 “Despite the name, buckwheat is not related to wheat, as it is not a grass (wooohoooo!!). Instead, buckwheat is related to sorrel, knotweed, and rhubarb. Buckwheat is referred to as a pseudocereal “, which refers to any plant that produce fruits and seeds used as flour but are not of the grass family. 💃🏻💃🏻
So,luckily my lovely friend and talented Chef Noha posted a recipe for flat bread using buckwheat in a workshop she gave and it to totally inspired me to try it with many of my favorite dishes. I changed the recipe slightly but here it is. I think you will love this “dough” it’s totally easy and can be prepared in 5 minutes no waiting time and it comes out as fabulous as a wheat based dough!
- 350g buckwheat flour
- 1 teaspoon baking powder
- 350 g natural yoghurt
- 1/2tsp salt
Mix four, baking powder and salt in a medium sized bowl. Add the yogurt then mix well by hand until it is all incorporated. Preheat oven to 175C.
On a clean work surface tip out the dough and knead for a few minutes until it comes together. Place in a flour dusted bowl cover with a towel and set aside for 30 minutes.
Place dough on a work surface. Divide by half and divide each half into six pieces.
Roll out each piece into 5inch/12cm round patties. Place on a flat tray with a parchment paper lining.
Fill with the desired filling.
Depending on the topping. Bake between 20-30 minutes.
