There are so many ways to prepare Kafta and this recipe is yet another quick easy and delicious way to make it. It’s simple but feels like a small feast. You can arrange the ingredients ahead of time place them in the baking tray wrap it in foil and place it in the fridge and just bake it 45 minutes before your ready to eat. You can also substitute minced chicken instead of beef for a lighter taste.
For the Kafta
- 500g minced beef or chicken
- 1 medium sized diced onion
- 1 cup chopped parsley
- 1/2 tsp salt
- 1/2 tsp all spice
- 1/2 tsp paprika
- 1/4 tsp turmeric
- 1/4 tsp Aleppo pepper or chilli poepper
For the Bake
- 3 large potatoes cut in 1 inch cubes
- 1 small onion cut in wings
- 5 whole jalapeño
- 250g passata sauce
- 2tbsp tomato paste
- 1-2 cups of water
- 1/2 tsp salt
- 1/4 cup parsley
- juice of half a lemon
In a medium sized bowl place all ingredients and knead to incorporate all the mixture well.
Shape the Kafta mixture into small cylindrical fist size patties.
In a shallow frying pan add 1 tbsp of olive oil and sear the patties just to cook the outside and place in a shallow glass baking tray.
Place diced potatoes, onion, parsley, jalapeños, passata tomato paste water salt and lemon juice on top of the Kafta in the glass baking tray.
Cover with foil paper and bake on 350F for 30 minutes or until the potatoes are soft.
Serve as is or with vermicelli jasmin rice.
