Ingredients
  • 3 cups of flour
  • 3cups of sugar
  • 1tsp baking powder
  • 3cups of warm water
  • 1 sachet of yeast
  • 1tsp of sugar
Method
  1. In a small bowl add sachet of yeast sugar an 1/4 cup of the warm water. In a medium sized bowl Mix the flour sugar and baking powder, add the yeast then the rest of the water. Using a mixer incorporate all the ingredients, cover and set aside for three hours. Right before using mix again with a mixer.

 

Stuffing

  1. Walnuts- crush 150g walnuts in a food processor. Add 1bsp of sugar , 1tbsp of rose water, mix and fill pancakes. Bake with a knob of butter for 15 minutes 170/330F and drizzle of sugar syrup as soon as they are out of the oven.
  2. Cheese- Use Fresh mozarella of akkawi cheese. Drain both very well so there is no water at all. cut in small cubes fill the pankaces add a knob of butter and bake for 15 minutes on 170/330F.
  3. Achta- In a meium sized pot combine 300ML of double cream to 450ML of single cream. In a small bowl combine thoroughly a 150ml of single cream with 3/4 cup of corn flour and 1 tsp of rose water and set aside. Bring double and single cream to a boil on a medium to low heat stirring constantly. As soon as it bubles start to form add the cornflour mixture take off the heat and keep stirring until the mixture becomes thick. pour immediately into a glass pyrex and let cool.
  4. Apple and Walnuts. 1 cup of finely diced apples mixed with 1tbsp of lemon juice, add 1/2 cup of walnuts, 1tbsp of sugar, 30g of melted butter. Mix well and set aside to cool. stuff pancakes. Add a knob of butter and cook in a preheated oven for 15 minutes on 170C/330F.

 

Sugar Syrup

  1. In a medium sized pot add 2 cups of sugar to 1 cup of water and briing to a boil for 5-6 minutes. Add 1tbsp of lemon juice and boil for another minute. pour in a glass bowl or jar.
