Kohlrabi Fritters
Ingredients
- 1 cup gram flour
- 2 eggs beaten
- 3 diced spring onions
- 1 bunch chopped parsley
- 1 kg Kohlrabi grated (leaves chopped)
- 1 tbsp paprika
- 1tsp oregano
- 1/2 tsp turmeric
- 1/2 tsp Aleppo pepper
- 1tsp salt
Method
- In a small bowl whisk the gram flour, and all the spices and set a side.
In a medium sized bowl place grated kolharbi, chopped kohlrabi leaves, onions, parsley mix lightly and then add the gram flour mixture and combine. Add Beaten eggs and mix very well until thoroughly combined. - In a shallow frying pan, add 1/2 cup of avocado oil or any high smoke point oil. When the oil is hot (test it by placing a small amount of the mixture if it sizzles then the oil is ready), place 1 tbsp of the mixture in the oil slowly and flatten it out. Bring down heat to medium cook for 3 minutes or until a crust has formed, the. turn over and cook for a further 2-3 minutes.
- Place on a rack to cool without the fritters touching. Serve with avocado yogurt sauce.
𝗔𝘃𝗼𝗰𝗮𝗱𝗼 𝗬𝗼𝗴𝘂𝗿𝘁 𝗦𝗮𝘂𝗰𝗲
In a small bowl combine 1 mashed avocado, with 1 cup of Greek yogurt, the juice of 1 lime salt and cayenne pepper to taste. Blitz with a hand blender until soft and creamy. Serve along side the fritters.
