Ingredients
- 150g/3meidium sized potatoes
- 210g strong or all purpose flour
- 3g of dry yeast
- 2tbsp milk at room temperature
- 2tsp sugar
- 1tsp salt
- 10g/2tsp butter
- 1 egg ( and another for egg wash)
- 1 tbsp black sesame seeds
Method
- Boil Potato until very soft. While its hot place it in a strainer and mash it through onto a medium sized bowl. Add butter salt, sugar and mix well. In a small bowl mix the milk and the yeast and add them to the potato mix.
- Sift the flour onto the potato mixture and mix until incorporated. Add the egg and knead all mixture together until its all incorporated. Set aside for 1-2 hours and cover with a towel.
- Take out the dough carefully and place it on a flourd surface. Cut the dough in four pieces. Stretch and fold each piece to create a round ball and sqqueeze the bottom of the dough ball, place it on the flourd surface and slide towards you using your two pinky fingers.
- Place the dough balls onto a baking sheet and cover with a damp towel for another 30 minutes to one hour. Brush with the white of one egg and sprinkle with black sesame seeds.
Bake on 325F for 15-18 minutes or until the buns are golden color.
